I Saw the future...Part 2

Ok so i was at the butcher shop, today we move along back outside down the corridor again. On the right hand side a little ways further down the hall, we run into another door. stepping through the door we come into another huge room that runs from that door about 40 feet straight ahead and then runs next to the corridor for about 300 ft. this is the new kitchen for the buffet. you look across the room and about a quarter of the way down the wall there is an opening for a set of double doors that leads to an even bigger room. we go through them and are standing in the entranceway of the dinning room. this room was gigantic. off in the distance you could see the stone archways that will eventually lead to the winter garden and its twin water falls. the room was just about 2 stories tall in some spots. and in the middle you could see the startings of an island or a penninsula where the food was going to be prepared for the guests or served to the guests. There were two pillars from floor to ceiling in the middle towards the island. and then a low wall on the far side creating a boundry between the dining rooma nd what i would presume is going to be part of the winter garden. you could also see where the escalator was goign to be for the second story and even more restaurants, including the Brazillian Steakhouse. So we went back into the kitchen and admired some of the 12 new ranges they had inside, still wrapped in their plastic coatings so they dont get scratched. They also had a grill there too. very nice, wish we had that at the Forrest. On the other side of the wall they had a wall of ice machines, and i mean that litterally. there had to be at least 15 of them just on the one wall. Now we go back out into the corridor and down a little and enter another cavernous room. about the same as the buffet kitchen in size but on the back wall on the other end of the room they have a gigantic oven. this oven is for the baking of bread. So i guess you figured this out that this is going to be the bakery. The oven was a good 15 ft long and 10 ft tall and was one of the ovens that has a shelf to bake on that rotates in a circle. the bread gets put on the shelf, and then it is slowly rotated up, back, down, forward, up againtot he door. all in a circle. very nice baking oven. on the other wall near the door were two very large hobart mixers, 20-30 qts easily if not more. these werent your table top mixers at home. and then there were a few stainless steel tables against another wall. This is where we atarted our journey back to work. The sheer amount of cooler space through out was enourmouse. 6 in the butcher shop and then another 12 scattered in the buffet. these are walkin coolers not reach in. I hope you enjoyed your little tour today. Other news after seeing the new bakery and realizing that they would be making their own bread i had a quick chat with the head baker Jen and she still has spots for bakers ont he third shift. So needless to say i put in for it. Please keep your fingers crossed and me in your thoughts and prayers that i might be able to get this. i would truly love to do this again. Oh and it pays 11/hr. damn good money. talk to you later joe
